I'm back from the annual Stampin' Up! Convention and wished it had lasted just a little bit longer because it was so much fun.
I delivered "fresh" pizza to everyone at our Women In Ink dinner and swap on Wednesday night.
Before the little box Big Shot die was available, I kept thinking it would be very cute to make little pizza cookies to put in the pizza boxes that are found on SCS. A couple of months ago I digitally drew my own version of a pizza box with a pizza cookie logo in red and green with a border of red and white checks on the box top to make it look Italian. I made a couple of the boxes, but hadn't made the cookies yet. With Convention on the way, I started thinking I could make this as my swap only using Stampin' Up! stamps and the new little box die. I looked through the catalog to see what might work that I already had. I used the curly label punch striped stamp and the punch, plus the sentiment from the Great Friend stamp set. They are very plain looking intentionally...I wanted them to look like a pizza delivery box. I used kraft, real red, glorious green, and whisper white card stocks; real red and glorious green classic inks; dimensionals and 3M Gold tape to put them together.
Inside each pizza box is a pizza cookie wrapped in a small cello bag. I Googled "mini pizza cookie" for ideas and found tons. I read several and picked some ideas I liked and made my cookies from them. Here is what I did: I used store-bought sugar cookie dough to make the pizza "dough" rounds. I baked the cookie dough according to the package directions. After spreading while baking, I realized they were too big for the boxes. I had to grab something fast while they were still hot from the oven to cut them to a smaller size. No time to dig through my cookie cutters, so I grabbed a champagne flute from my china cabinet...the mouth of the glass was the perfect size!!! I used the flute to cut out a circle from the center of each cookie. (Which left cookie "onion rings" as Jamie said as he munched them down.) After cooling, I spread a bit of strawberry jam on each cookie for the sauce. Then I grated a white chocolate bar and sprinkled some on each for the cheese. (You could also tint shredded coconut for the cheese.) The next part was the hardest, but not really hard - just sticky and time consuming. I cut out tiny circles from strawberry fruit roll ups. I used a citrus juicer thing. Don't know what it's really called, but it's one of those "things" that you stick into a lemon, lime, or orange then you squeeze the fruit and the juice comes out this "thing". Well, anyway, the "thing's" little spout (I guess it's a spout because that's where the juice comes out) is the perfect size for the mini pepperoni. I used the spout end to cut out pepperoni from the fruit roll up, then you have to peel away the excess fruit roll up...this is tricky 'cuz it's sticky. ; ) I used a toothpick to help place the pepperoni on each pizza. Thank goodness for toothpicks!!!
I hope you enjoy the mini cookie pizzas and would love to hear if you give them a try. Thanks for stopping by.
